Hotel Royal Beitou PURE CUISINE presents a brand-new spring seasonal menu: "Aged in Time, Revealed in Taste." This season, the culinary team embraces "fermentation" as the core soul, treating this ancient preservation technique as a dialogue across time and seasons.


Concept: The Maturation and Blooming of Time



Mastering precise fermentation conditions, the team has delicately preserved winter's harvest of mustard greens and Caoshan citrus. Through the tempering of time, these ingredients develop deeper acidity and sweetness. This long-nurtured power allows the produce to transcend seasonal limits and bloom once more on the spring dining table. Below are the three main highlights of this season's menu.









| A Dialogue Between Fermentation and Time

The culinary team views fermentation as an art of preserving time. Through this ancient technique, winter's mustard greens and Caoshan citrus are finely preserved, allowing the ingredients to transform into profound flavors that let the essence of winter bloom on the spring table.


| Intersection of Seasonal Ingredients and Matured Flavors
When seasonal spring bamboo shoots, local sponge gourd, and Shell Ginger meet the matured flavors of fermentation, multiple layers of taste unfold. This encounter between spring freshness and mellow maturation embodies the close link between time, season, and local ingredients.


| Tea Infusions and Refined Sensory Experiences
This season not only showcases craftsmanship in the main courses but also elegantly integrates tea elements into the afternoon tea experience. With subtle notes of Geisha coffee, Darjeeling, and Earl Grey, paired with a welcoming raw kombucha, the journey from savory to sweet is a complete sensory experience.

The "PURE" menus center on fermentation techniques, leading guests to explore the transformation of time from cold appetizers to main courses.


Highlights include duck breast with fermented mustard greens and pineapple, a warm crab appetizer with sake lees and Caoshan citrus, and a risotto crafted with aged Italian rice and local sponge gourd. Main course options range from Spanish Iberico Pork Tomahawk and deluxe seafood platters to Japanese A5 Wagyu and aged goose breast, catering to every palate.

The desserts focus on fruit and tea notes. The Geisha Coffee Hazelnut Mille-feuille layers fine coffee aromas, while the Blood Orange and Yuzu Chocolate Mousse balances citrus acidity with rich chocolate for an elegant finish.




PURE Afternoon Tea




Continuing the "Aged in Time" theme, this season's afternoon tea incorporates fermentation and diverse tea aromas into delicate pastries.

The experience begins with a refreshing house-brewed sparkling Kombucha. Savory items like Green Tea Beef Short Rib Salsa and Earl Grey Sous-vide Chicken Breast showcase the fusion of tea and fermentation. Sweets feature Caoshan Tangerine Nougat, Citrus Caramel Banana Chocolate Tart, and an Earl Grey series, layering fruit and tea for a light yet complex spring profile.


Notably, the season includes a reinterpretation of the popular "Dubai Chocolate" with sesame and Geisha coffee, blending creativity with artisan spirit.

The "Healthy Vegetarian Set" is grounded in natural whole foods, adhering to a philosophy of no meat, no eggs, and no alliums. Through French and Italian culinary techniques, it awakens the gentle, complex layers of fruits, vegetables, nuts, and spices.


The Lunch Set features a Grilled Lion's Mane Mushroom Steak as the centerpiece, with a lightly charred exterior and a juicy, tender center, served with a homemade black pepper sauce that highlights its natural sweetness. The cold appetizer is a Portobello and Fresh Vegetable Salad, brightened by the fruity notes of an orange vinaigrette. Warm your palate with a Classic Minestrone, and conclude with the crispy spice of Almond Curry Apple Crisps and the smooth finish of the chef's signature dessert.

The Dinner Set adds further depth—the Chestnut Risotto is creamy with a nutty sweetness, while the Truffle French Toast is crispy on the outside and soft within, paired with a rich yet balanced pumpkin cashew sauce. A pure and wholesome delicacy that brings a refined sense of ritual to your daily life.

Awaken gently in the early morning with a cup of handcrafted coffee. Whether it is the bright floral and citrus notes or the deep richness of hazelnut and dark cocoa, our two award-winning coffee beans can be paired with exquisite syrups and milk varieties to create up to 64 flavor combinations. Each cup serves as a personalized morning landscape for the traveler.

Inspired by local ingredients, the chef has created a series of refined main courses: the "Ocean Star" certified Shenao Squid Seafood Congee, Braised Beef Noodle Soup, Tandoori Chicken with Crispy Flatbread, and Roasted Pork Belly Rice. The daily limited Black Garlic Chicken Soup releases a slow, aromatic steam—perfectly portioned and rich in flavor to accompany a leisurely morning.

Golden Eggs, rich in lutein, take center stage in our full range of egg dishes.
