In Taipei’s Zhongshan neighborhood, familiar streets hold the flavors of places once called home.
Follow Zhongshan North Road into the side streets, where long-standing shops sit beside newer restaurants. At 華承軒, a small noodle house on Section 1, three generations of food memories find their way into a simple bowl of hot noodles.
Founder Shawn grew up in a family that has cooked for three generations, surrounded by the home-style noodles and coastal flavors of Dachen New Village. After two decades working as a Japanese-cuisine chef in New York and Taiwan, he opened 華承軒 to carry those familiar tastes forward through handmade noodles.
ABOUT THE TABLE / NOTES FROM THE KITCHEN
Eight Hours for the Broth
Noodles Made Fresh Each Day
Inspired by Cantonese soup-making traditions, the chicken broth with Jinhua ham simmers for eight hours. Roasting and emulsification give it a golden color and a rich, mellow finish.
The noodles are made fresh each day, with the dough kneaded and rested three times. From tending the broth to working the dough, the food draws on skills refined through time.
